Moustokouloura (a kind of biscuits)

• 1 cup of olive-oil
• 1 glass of petimezi
• 1 glass of sugar
• 1 glass of orange juice
• ½ cup cognac
• 1 sachet baking powder
• 1 teaspoon soda
• 1 teaspoon cinnamon
• 1 teaspoon clove powder
• 1 kg flour

In a bowl mix the olive-oil, petimezi and sugar. Add the brandy, cinnamon, clove powder and orange juice in which the soda has been dissolved. Pour in the flour with the baking powder and stir. The dough is ready.

Knead the moustokouloura and bake in a preheated moderate oven at 180° C for about 20 minutes.

Sweet Balls

• ½ pound of white bread dough
• 100ml olive oil
• 1 teaspoon of cinnamon powder
• ½ teaspoon clove powder
• 1 cup of  chopped walnuts
• Petimezi as much as you want

Mash bread dough with oil until oil is absorbed. Mix the walnuts with cinnamon and clove powder, in a bowl.
Take one piece of dough, big as a loquat, shape it off, make with your  finger a dent, then put in a little of the mixture (nuts & spice)  and close it,  pinching the dough so that it does not open.
Put all filled donuts on a greased baking pan, but not too close because when they swell they might stick together. Bake at 200 ° C until golden brown. Remove, pour  petimezi and serve.

Pancakes with sour cream cheese

• 2 cups of water
• 1 cup of milk
• 1 tablespoon baking soda
• 1 cup of cheese or cheese tart
• 1 tablespoon olive-oil
• 1 teaspoon salt
• 3 ½ cups flour
• Petimezi

Mix the water with milk, soda, che-ese or cream cheese, oil, salt and flour as much as it needs  to make it a smooth batter .
Pour  olive-oil into the pan and wait until it heats.  Dip a spoon into the water and then put spoonfuls of the mixture into the pan.

When the pancakes get browned on both sides then remove, place them on a platter and drizzle with petimezi.
